Is the CUES drivetrain really 3x more durable? It's actually the LINKGLIDE cassette that Shimano claims to be 300% more durable. CUES is the newer drivetrain ecosystem for products below 105.
The bigger 625 Wh battery seems important to me. The suspension fork does not seem important.
The only differences I see between these two is that the S has a bigger chain ring and a different (better?) brake (and the S is also available in blue).
The 7S is Gen 2, while the 8S is still Gen 1.

The 8S has a fixed fork, while the 7 and 7S have a suspension fork. I can maybe see the benefit of a suspension fork, but it doesn't seem like an important feature to me.
The 8S has its headlight mounted on the stem, while the 7 and 7S have their headlight mounted on the fork.
The rack that comes with the 8S is not MIK compatible.
The fenders on the 8S are aluminum, while the 7 and 7S have plastic fenders.
If I got this bike, I would almost certainly want to get studded tires for it, which means I would want to have a separate wheelset for that purpose.
